Mud Cake
Ingredients

80ml cocoa powder
150g dark chocolate (melted)
150g light butter (melted)
300ml brown sugar
100g ground almonds
4 eggs (separated)

Preparation Time: 25 mins
Cooking Time: 75 mins


1. Preheat oven to 325°F / 160°C.

2. Coat an 8 inch (20 cm) square cake pan with cooking spray or oil.

3. Combine the cocoa with 80 ml of hot water in a large bowl. Stir until smooth.

4. Add the melted chocolate and butter, plus the sugar and almonds.

5. Stir in the egg yolks one at a time.

6. Beat the egg whites until soft peaks form. Gently fold the egg whites into the chocolate mixture.

7. Pour the mixture into the prepared pan and bake for about 75 minutes or until firm.

8. Remove the cake from the pan and decorate as desired!
