Fridge Biscuits




Ingredients
250g digestive biscuits :: 300g milk chocolate
100g unsalted butter :: 150g golden syrup
100g dried apricots, chopped :: 75g raisins or sultanas
Yellow and red Smarties

- Line a 20cm (8in) shallow, square-shaped tin with cling film (make sure you leave a bit hanging over the sides).
- Put biscuits into a plastic bag, wrap this in a tea towel, then bash with a rolling pin to break them up.
- Melt chocolate, butter and golden syrup in a heatproof bowl set over a pan of barely simmering water, stir occasionally. Make sure the bottom of the bowl doesn’t touch the water and that you don’t overheat it.
- Remove from heat and stir in the biscuits, apricots and raisins.
- Spoon into the tin and level the surface – pressing down firmly. Score the surface into however many pieces you want to cut it into later on.
- Push a Smartie into each piece.
- Leave to cool, then put in the fridge for a couple of hours to set.
- When you’re ready to serve it, lift it out of the tin by grabbing the over hanging cling film, then cut it complete through using the scored lines you made earlier.
